Lipase-catalyzed Soybean Oil Hydrolysis Monitored via Acid Number Detection

Abstract: Hydrolysis of soybean oil catalyzed by lipase from Candida lipalytica was investigated. The relative concentrations of the components in the hydrolysate were determined by means of HPLC, furthermore, a new rapid method to monitor soybean oil hydrolytic process was developed based on the relationship between the acid number and the relative concentration of the various components in the hydrolysate.
