利用酸值监测脂肪酶催化豆油水解反应的进程

摘要: 采用解脂假丝酵母脂肪酶对豆油的水解进行研究, 通过高效液相色谱对水解产物成分进行了分析鉴定, 得出豆油水解产物成分的相对含量, 并根据其酸值的大小与水解产物中各成分相对含量的对应关系, 初步建立了监测脂肪酶催化水解豆油反应进程的方法.

Abstract: Hydrolysis of soybean oil catalyzed by lipase from Candida lipalytica was investigated. The relative concentrations of the components in the hydrolysate were determined by means of HPLC, furthermore, a new rapid method to monitor soybean oil hydrolytic process was developed based on the relationship between the acid number and the relative concentration of the various components in the hydrolysate.
