绿叶蔬菜真空冷冻干燥实验研究

摘要: 在LGJ1.5冷冻干燥机上进行了菠菜和香菜真空冷冻干燥试验。通过正交实验得出菠菜和香菜的最优工艺参数及比较合理的工艺流程和冻干曲线。对冻干后的菠菜和香菜进行真空包装,经一定时间储存后进行了品质分析。结果表明,真空冷冻干燥的菠菜和香菜复水性好,不仅保持了鲜菜固有的色泽、风味及形状,而且能有效地保持其营养成分。

Abstract: This experiment was performed on the LGJ 1.5 vacuum freeze drying equipment.The best technology parameter of spinach and coriander,better process flow and freeze drying curve were attained by orthogonal test.After vacuum packaging and storing the freeze dried spinach and coriander the quality analyze was performed.The results show that the vacuum freeze dried spinach and coriander′s reproductivity is good.The fresh vegetable′s color,flavor,shape and their nutrient matter are effectively sustained.
